Anzac Cookies

Ingredients:
- 1 cups rolled oats (use GF if required)
- 1 cups plain flour (use GF if required)
- 1 cups desiccated coconut
- 1 cup sugar
- 150 gms butter
- 2 TBsp golden syrup
- 1/2 teaspoon bicarb soda
- 2 TBsp boiling water
Instructions:
- Heat oven to 160C and grease a few flat trays.
- In a large bowl place the flour, oats, coconut and sugar and set aside.
- In a small pan melt the butter slowly and add golden syrup.
- Stir to combine and remove from heat.
- In a small cup place boiling water and add bicarbonate soda (this will bubble).
- Add the boiling water mix to the butter and stir.
- Pour into bowl with dry ingredients, then stir to combine.
- Roll into balls and place with about 5cm around each ball to allow expanding.
- Cook in oven for 10-15 mins in batches.
- Remove from oven when golden brown.
- Use a spatula to move to cooling tray to cool completely.
- Store in an airtight container once completely cool.
