Ashmas Mash Spud

Ingredients:
- 4 large potatoes
- 1-3 dried chillies
- 1 onion chopped (omit for FODMAP)
- 1-2 garlic cloves crushed
- 2 TBSP mustard oil*
- 3-4 TBSP butter melted
- 1-3 spring onions chopped
- salt and pepper
Instructions:
- Boil potatoes in a pot with the skin on, until soft but not falling apart. About 20 minutes.
- While spuds are cooking, heat fry pan and add oil.
- Cook onion, if using slow and low for about 10 minutes.
- Add garlic and crushed up chilli (use your hands to crushed chilli, but remember to wash hands well afterwards.)
- Fry well until all golden and brown.
- Once spuds are cooled slightly remove skin and mash well.
- Add the entire contents of the fry pan, add salt and pepper to taste, and stir in melted butter and stir well.
- Garnish with spring onions if desired.
- Serve with slow cook roast on previous post.
