Awesome Roasted Beetroot Dip

Ingredients:
- 4 Beetroots
- 4 tbsp olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon salt
- 1/2 chilli
- 2 tbsp lemon juice
Instructions:
- Peel and chop beets and place on oven tray.
- Drizzle 2 tbsp olive oil over beets and toss to coat.
- Place in moderate preheated (180C) oven for 45 mins, and turn 2 times.
- Once done allow to cool completely on the tray.
- Place in blender, with remaining ingredients and blend until desired consistency (about 3-4 minutes.
- ) Serve with something crunchy!.
