Awesome Roasted Beetroot Dip


Ingredients:

  • 4 Beetroots
  • 4 tbsp olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon salt
  • 1/2 chilli
  • 2 tbsp lemon juice

Instructions:

  1. Peel and chop beets and place on oven tray.
  2. Drizzle 2 tbsp olive oil over beets and toss to coat.
  3. Place in moderate preheated (180C) oven for 45 mins, and turn 2 times.
  4. Once done allow to cool completely on the tray.
  5. Place in blender, with remaining ingredients and blend until desired consistency (about 3-4 minutes.
  6. ) Serve with something crunchy!.
