Black Bean Salad

Ingredients:
Main:- 1 can black beans rinsed and drained
- 1 can corn drained
- 1 red capsicum diced
- 3-4 spring onions chopped
- 1/2 bunch parsley finely chopped
- 3 TBsp olive oil
- 1 TBsp balsamic vinegar
- 1/2 teaspoon Dijon mustard
- salt and pepper to taste
Instructions:
Main:- Put all Salad ingredients in a medium bowl and stir well to mix.
- Place dressing ingredients in a small jar and shake well.
- Pour dressing over salad just before serving and mix well.
- mix in jar and shake.
