Buckwheat Pancakes

Ingredients:
- 1 1/2 cups buckwheat flour (McKenzies if possible)
- 2 tsp baking powder
- 1 cup milk
- 2 large eggs beaten
- 2 TBsp honey or maple syrup
- Butter for the pan
- Desired toppings
Instructions:
- Mix dry ingredients together and in a separate bowl mix wet ingredients.
- Combine together and mix until lumps removed.
- Melt butter in pan.
- Pour 2 TBsp amounts into medium hot pan and cook until bubbles pop in the batter.
- Flip over and cook until golden brown.
- Cook until all done and serve with favourite toppings.
