Ingredients:
- 2 cans chopped tomatoes
- 1 cans kidney beans
- 1 cans black beans
- 1 can corn
- 1-2 sweet potatoes peeled and chopped
- 2-3 TBsp olive oil
- 2-4 garlic cloves crushed
- 1 teaspoon cumin
- 1/2 teaspoon coriander and chilli
- salt and pepper to taste
- Colourful peppers for garnish (if desired)
Instructions:
- Heat oil in large pot and cook garlic for a few minutes.
- Add spices and cook for another minute or two.
- Add sweet potatoes and stir to coat.
- Add chopped tomatoes and cook until sweet potatoes cooked, but not mushy (about 10-20 minutes.)
- Rinse and drain beans and add to the pot.
- Add salt and pepper if using.
- Taste and add additional spices if necessary.
- Can be doubled.
- Serve with any or all of grated cheese, guacamole, salsa, sour cream, chopped peppers, grated carrots, shredded lettuce, corn chips and flat bread.
