Cauliflower Soup

Ingredients:
- 1-2 cauliflowers broken into flowerets
- 2-3 crushed garlic cloves
- 1-2 tbsp olive oil
- stock
- Salt and white pepper to taste
Instructions:
- Very easy, quick and delicious. Wash cauliflower and cut into flowerets.
- Cook garlic in a little olive oil for a few minutes.
- Add flowerets and pour in enough stock to come to almost to the top of the cauliflower.
- Bring to boil then reduce and simmer until cauliflower is very soft.
- Cool a little and puree with stick bender.
- Season with salt and white pepper to taste.
- Serve with toast for weekend lunch.
