Cazzies Veggie Soup


Ingredients:

  • 2 TBsp olive oil
  • 4-6 cloves garlic crushed
  • 2 TBsp ginger grated
  • 1/4-1/2 teaspoon chilli
  • 2 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 2 cups red lentils
  • 1.5 lt stock
  • salt and pepper to taste
  • Any veggies you have in your fridge!
  • Greek yogurt to serve

Instructions:

  1. Heat oil in large pot and cook garlic and ginger for 5 minutes.
  2. Add spices and cook a further 2 minutes.
  3. Add lentils and stock and bring to the boil.
  4. Reduce to simmer and cook for 20 minutes.
  5. Meanwhile chop the vegetables you want to add ( great for any veggies you want to get rid of at the end of the week.
  6. ) Cook for about 20 minutes or until veggies are cooked.
  7. Serve with a dollop of Greek yogurt and naan bread if desired.
