Cazzies Veggie Soup


Ingredients:

  • 2 TBsp olive oil
  • 4-6 cloves garlic crushed
  • 2 Tbsp ginger grated
  • 1/4-1/2 teaspoon chilli
  • 2 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 2 cups red lentils
  • 1.5 lt stock
  • salt and pepper to taste
  • Any veggies you have in your fridge!
  • Greek yogurt to serve (obitmit for vegan)

Instructions:

  1. Heat oil in large pot and cook garlic and ginger for 5 minutes.
  2. Add spices and cook a further 2 minutes.
  3. Add lentils and stock and bring to the boil.
  4. Reduce to simmer and cook for 20 minutes.
  5. Meanwhile chop the vegetables you want to add ( great for any veggies you want to get rid of at the end of the week.)
  6. Cook for about 20 minutes more or until veggies are cooked.
  7. Season with salt and pepper to taste.
  8. Serve with a dollop of Greek yogurt and naan bread if desired.
