Cazzies Veggie Soup

Ingredients:
- 2 TBsp olive oil
- 4-6 cloves garlic crushed
- 2 TBsp ginger grated
- 1/4-1/2 teaspoon chilli
- 2 teaspoon cumin
- 1/2 teaspoon turmeric
- 2 cups red lentils
- 1.5 lt stock
- salt and pepper to taste
- Any veggies you have in your fridge!
- Greek yogurt to serve
Instructions:
- Heat oil in large pot and cook garlic and ginger for 5 minutes.
- Add spices and cook a further 2 minutes.
- Add lentils and stock and bring to the boil.
- Reduce to simmer and cook for 20 minutes.
- Meanwhile chop the vegetables you want to add ( great for any veggies you want to get rid of at the end of the week.
- ) Cook for about 20 minutes or until veggies are cooked.
- Serve with a dollop of Greek yogurt and naan bread if desired.
