Chocolate Pud


Ingredients:

  • 60gms butter at room temperature
  • 1 teasp vanilla essence
  • 1/2 cup caster sugar
  • 1 egg beaten
  • 1/2 cup milk
  • 1/2 cup flour (sue GF if desired)
  • 1/2 cup cocoa powder
  • 1/2 cup brown sugar
  • 1 1/2 cups boiling water
  • Icing sugar to decorate
  • Cream and/or Ice cream to serve

Instructions:

  1. Place butter, essence and caster sugar in electric mixer and beat until light and fluffy.
  2. Add egg and beat until combined.
  3. Stir in combined sifted flour and 1/4 cup of cocoa.
  4. Pour into oven proof bowl and smooth over top.
  5. Sprinkle over the top the 1/4 cup of sifted cocoa and all the brown sugar.
  6. Carefully pour over boiling water and place in preheated (180C) oven for 30-40 minutes.
  7. Remove from oven and let stand for 5 minutes (if you can wait!) Sprinkle over icing sugar and serve with cream and/or ice cream.
