Chocolate Pud

Ingredients:
- 60gms butter at room temperature
- 1 teasp vanilla essence
- 1/2 cup caster sugar
- 1 egg beaten
- 1/2 cup milk
- 1/2 cup flour and cocoa powder
- 1/2 cup brown sugar
- 1 1/2 cups boiling water
- Icing sugar to decorate
- Cream and/or Ice cream to serve
Instructions:
- Place butter, essence and caster sugar in electric mixer and beat until light and fluffy.
- Add egg and beat until combined.
- Stir in combined sifted flour and 1/2 the cocoa.
- Pour into oven proof bowl and smooth over top.
- Sprinkle over the top the remaining sifted cocoa and brown sugar.
- Carefully pour over boiling water and place in preheated (180C) oven for 30-40 minutes.
- Remove from oven and let stand for 5 minutes (if you can wait!) Sprinkle over icing sugar and serve with cream and/or ice cream.
