Chris's Filipino Egg Pie

Ingredients:
Crust:- 3 cups plain flour
- 4 TBsp sugar
- 1 teasp salt
- 250gms butter cut into cubes
- 1/4 cup cold water
- 1 can evaporated milk
- 1 can condensed milk
- 4 eggs
- 1 egg yolk and white separated
- 1 teasp vanilla extract
- 1 TBsp lemon juice
Instructions:
Crust:- Combine flour, sugar and salt and mix well.
- Add butter and beat in mixer, until well combine.
- Gradually add the cold water and mix well.
- Remove dough from bowl and make into a ball.
- Cover with wrap and refrigerate for 30 minutes.
- Once done sprinkle flour on a clean surface.
- Flatten dough and roll until about 1/2 cm thick.
- Cut in two and carefully place in two greased metal pie dishes.
- Push down and trim edges but leave some excess all around to allow for shrinking.
- Put in fridge while making the filling.
- Heat evaporated milk in bowl for 1 minute.
- In a large bowl whisk the four eggs and seperate yolk.
- Gradually pour in condensed milk while whisking.
- Add vanilla and lemon juice, while whisking.
- Add the evaporated milk and whisk while pouring in.
- Continue whisking until all ingredients well combined.
- Beat the egg white until soft peaks form, then fold into the mixture.
- Remove crusts from fridge and pour in filling.
- Place in preheated (175C) oven for 15 minutes then reduce oven to 130C and cook for a further 40 minutes.
- Or cook until tooth pick comes out clean when inserted in the centre of the pie.
- Allow to cool completely before cutting.
