Coconut Rough Slice


Ingredients:

  • 2 cups desiccated coconut
  • 2 TBSP cocoa
  • 10 medjool dates
  • 8 TBSP coconut oil melted
  • 200 gms dark chocolate (use diary free if required)

Instructions:

  1. Grease a pan and insert grease proof paper in it and set aside.
  2. Cut the dates and remove the pips, then cut them roughly.
  3. Place dates in a blender and blend until well chopped and starting to clump.
  4. Pour in the coconut, cocoa and 7 TBSP of coconut oil.
  5. Blend until combined, push down the sides if necessary.
  6. Pour into prepared dish and push down with the back of a spoon to make it flat.
  7. Place in freezer while you prepare the topping.
  8. In a microwave melt the remaining coconut oil, for 30 second amounts until melted.
  9. Break the chocolate into small pieces and place in the bowl with the melted coconut oil.
  10. Place in microwave for a minute, remove and stir.
  11. Keep doing this until completely melted (mine only took one minute.)
  12. Remove slice from the freezer and pour the melted chocolate over the top.
  13. Smooth out with the back of a spoon.
  14. Place back in freezer for 20-30 minutes (or until top set.)
  15. Remove from freezer and chop into slices with a sharp knife.
  16. Store in an airtight container in the fridge.
