Cookie in a Cup


Ingredients:

  • 2 ceramic cups
  • 2 TBsp butter
  • 1 TBsp brown sugar
  • 1 TBsp sugar
  • 1/4 teaspoon vanilla
  • 1/4 teaspoon baking powder
  • 1/3 cup flour (GF if necessary)
  • 1 egg
  • Pinch salt

Instructions:

  1. In a small jug melt the butter for 30 seconds.
  2. Add sugars and vanilla and stir.
  3. Beat egg and stir in, then add flour, baking soda and salt.
  4. Stir until lumps removed, then stir through the chocolate chips.
  5. Pour equally between the two cups and cook individually for 30-40 seconds each.
  6. Sprinkle over a few more chocolate chips and sprinkle a little cocoa.
  7. Serve immediately.
