Ingredients:
Main:- 125gm butter
- 1/3 cup sugar
- 2 eggs
- 1 1/4 cup Gluten Free SR Flour
- 1/3 cup milk
- 1/2 cup jam
- 150gms cream cheese
- 1 cup icing sugar
- 1/4 lemon juice
Instructions:

- Preheat oven to 180C, remove cream cheese from fridge and place cup cake liners in cup cake tray.
- Cut butter into cubes and place in mixer on high until colour change to little yellow.
- Add sugar and mix again.
- Add eggs one at a time and mix well between each addition.
- Add sifted flour and mix while adding milk.
- Once all combined fold through jam.
- Spoon out about 1 heap table spoon in each cup cake hole (makes about 16.
- ) Cook for 20 minutes or until golden on top.
- Cool completely on baking rack.
- Once completely cool you can ice them.
- Beat the room temperature cream cheese and add the sifted icing sugar.
- Pour in your squeezed lemon 1/4 (may need to adjust depending on the size of your lemon.
- ) You want a nice spreadable constancy.
- Smooth generously over each cup cake and place in fridge until set (about 1-2 hours.
