Curry Prawn Noodles


Ingredients:

  • 300-400 gms prawns fresh or frozen
  • or chopped packet of tofu if vegetarian
  • 1 packet noodles cooked per instructions (retain some water) (Use gluten free if required)
  • 1-2 Bok Choy or chow sum washed and chopped
  • 2-3 cloves garlic ground
  • 1 inch ginger grated
  • 1-2 Tbsp Green curry paste
  • 1 can coconut milk
  • 1 stock cube
  • 2-3 Tbsp olive oil
  • 3 spring onions washed and chopped
  • 1-2 red chillies chopped

Instructions:

  1. Heat oil in large pan or wok.
  2. Add oil and cook garlic and ginger for a few minutes.
  3. Add the curry paste and stir for a minute or two then add coconut milk and stock cube.
  4. Add the prawns and cook until done (they will turn pink.) If using tofu add now.
  5. Add the noodles and extra water as required.
  6. Stir through Bok choy and season with salt and pepper if required.
  7. Serve with spring onions and chilli sprinkled on top.
  8. (You can add other vegetables like bean sprouts, beans, snow peas ect what ever you have available.)
