Curry Prawn Noodles

Ingredients:
- 300-400 gms prawns fresh or frozen
- or chopped packet of tofu if vegetarian
- 1 packet noodles cooked per instructions (retain some water) (Use gluten free if required)
- 1-2 Bok Choy or chow sum washed and chopped
- 2-3 cloves garlic ground
- 1 inch ginger grated
- 1-2 Tbsp Green curry paste
- 1 can coconut milk
- 1 stock cube
- 2-3 Tbsp olive oil
- 3 spring onions washed and chopped
- 1-2 red chillies chopped
Instructions:
- Heat oil in large pan or wok.
- Add oil and cook garlic and ginger for a few minutes.
- Add the curry paste and stir for a minute or two then add coconut milk and stock cube.
- Add the prawns and cook until done (they will turn pink.) If using tofu add now.
- Add the noodles and extra water as required.
- Stir through Bok choy and season with salt and pepper if required.
- Serve with spring onions and chilli sprinkled on top.
- (You can add other vegetables like bean sprouts, beans, snow peas ect what ever you have available.)
