Curry Noodles

Ingredients:
- 300-400 gms prawns fresh or frozen (replace with tofu for vegetarian)
- 1 packet noodles cooked per instructions (retain some water)
- (Use gluten free if preferred)
- 1-2 bunches Bok Choy or chow sum washed and chopped
- 1-2 red chillies chopped
- 3 spring onions washed and chopped
- 2-3 cloves garlic ground
- 1 inch ginger grated
- 1-2 TBsp Green curry paste
- 1 stock cube
- 1 can coconut milk
- 2-3 TBSP olive oil
Instructions:
- Heat oil in large pan or wok.
- Add oil and wash hot add garlic and ginger, cook for a few minutes.
- Add the curry paste and stir for a minute or two then add coconut milk and stock cube.
- Add the prawns and cook until done (they will turn pink.)
- Add the noodle and extra water as required.
- Stir through Bok choy and pepper.
- Serve with spring onions sprinkled on top.
- (You can add other vegetables like bean sprouts, beans, snow peas ect what ever you have available.)
