Curtis Stones Rice Noodles

Ingredients:
- 500gms mince chicken
- 200gms Pad Thai rice noodles
- 2-3 carrots grated
- 4 spring onions chopped
- 2-4 garlic cloves crushed
- 1/4 cup Oyster sauce
- 2 TBsp Soy sauce (GF if necessary)
- 1 TBsp chilli sauce
- 1 teaspoon cornflour, mixed with 2 TBsp water
- Olive oil
- salt and pepper to taste
Instructions:
- Cook Pad Thai noodles per packet and instructions and sprinkle olive oil over them and mix (this stops the noodles sticking together) then set aside.
- Meanwhile mix all sauces together, with cornflour mixture and set aside.
- Heat wok or large pan and add olive oil.
- Heat oil for a few minutes before adding garlic.
- Cook garlic for 5 minutes then add mince chicken.
- Cook chicken until fully cooked then add carrot, sauce mixture and noodles.
- Stir to combine then add salt and pepper and top with spring onion.
- Serve immediately with additional spring onion on top of each bowl.
