Fall Greens

Ingredients:
Main:- 250 gms baby spinach stems removed
- 1/2 cup cranberries
- 1/2 cup walnuts
- 4 TBsp crumbled blue cheese or feta ( whatever is available in your fridge)
- 3 TBsp extra virgin olive oil
- 1 TBsp champagne or white wine vinegar
- 1 teaspoon seeded mustard
- 1-4 teasp salt and pepper
Instructions:
Main:- Sprinkle spinach leaves on a platter, then cranberries and walnuts.
- Gently crushing the walnuts in your hands as you sprinkle.
- Drizzle over dressing and then top with crumbled cheese on top.
- Serve immediate.
- This recipe can be doubled.
- Put all dressing ingredients in a small jar with a lid.
- Give it a good shake and set aside.
