Fall Greens


Ingredients:

Main:
  • 250 gms baby spinach stems removed
  • 1/2 cup cranberries
  • 1/2 cup walnuts
  • 4 TBsp crumbled blue cheese or feta ( whatever is available in your fridge)
Dressing:
  • 3 TBsp extra virgin olive oil
  • 1 TBsp champagne or white wine vinegar
  • 1 teaspoon seeded mustard
  • 1-4 teasp salt and pepper

Instructions:

Main:
  1. Sprinkle spinach leaves on a platter, then cranberries and walnuts.
  2. Gently crushing the walnuts in your hands as you sprinkle.
  3. Drizzle over dressing and then top with crumbled cheese on top.
  4. Serve immediate.
  5. This recipe can be doubled.
Dressing:
  1. Put all dressing ingredients in a small jar with a lid.
  2. Give it a good shake and set aside.
