Frittata

Ingredients:
- 10 eggs
- 4 potatoes
- 2 cups shredded baby spinach
- 1 punnet tiny tomatoes halved
- 2 spring onions chopped
- 4 rashes bacon chopped (optional)
- salt and pepper
Instructions:
- Grease a rectangular dish and pre heat oven to 180C.
- Peel and chop spuds into small pieces.
- Cook in microwave for 6-8 mins in salted water.
- Drain well then place in dish, and place spinach on top.
- Cook bacon and sprinkle over spud and spinach.
- Beat eggs in large bowl and season with salt and pepper, pour over ingredients then sprinkle over tomatoes and spring onions.
- Cook for 30-40 mins or until centre is cooked.
- Serve hot or cold with salad on the side.
