Gerrys Banana and Pecan Cake

Ingredients:
- 3 bananas mashed
- 1 1/2 cups pecans
- 3 eggs lightly beaten
- 1/2 cups dark chocolate
- 1 1/2 cups brown sugar
- 1 3/4 cups plain flour (use GF if required)
- 2/3 cup milk
- 1/4 cup oil
- 1 teasp bicarbonate soda
- 1 1/2 teasp baking powder
- salt
Instructions:
- Preheat oven to 170 and line a loaf tin with baking paper.
- Place pecans on a tray and cook for 5-10 minutes.
- Once cool to handle roughly chop and set aside.
- Combine bananas, eggs and sugar in the bowl of electric mixer.
- While mixing slowly add the milk, oil and a pinch of salt.
- When combine add flour, bicarbonate soda and baking powder.
- Mix for 3-5 minutes or until mixture is combined.
- Stir through pecans and chopped chocolate, then pour into prepared tin.
- Bake for 1 hour and 15 minutes or until done.
- Best served immediately out of the oven!.
