Gerrys Banana and Pecan Cake


Ingredients:

  • 3 bananas mashed
  • 1 1/2 cups pecans
  • 3 eggs lightly beaten
  • 1/2 cups dark chocolate
  • 1 1/2 cups brown sugar
  • 1 3/4 cups plain flour (use GF if required)
  • 2/3 cup milk
  • 1/4 cup oil
  • 1 teasp bicarbonate soda
  • 1 1/2 teasp baking powder
  • salt

Instructions:

  1. Preheat oven to 170 and line a loaf tin with baking paper.
  2. Place pecans on a tray and cook for 5-10 minutes.
  3. Once cool to handle roughly chop and set aside.
  4. Combine bananas, eggs and sugar in the bowl of electric mixer.
  5. While mixing slowly add the milk, oil and a pinch of salt.
  6. When combine add flour, bicarbonate soda and baking powder.
  7. Mix for 3-5 minutes or until mixture is combined.
  8. Stir through pecans and chopped chocolate, then pour into prepared tin.
  9. Bake for 1 hour and 15 minutes or until done.
  10. Best served immediately out of the oven!.
