Gluten Free Cheese Muffins

Ingredients:
- 1 1/4 cups gluten free flour
- 1 tsp xanthan gum
- 2 large eggs beaten
- 2/3 cup water
- 2 tsp baking soda
- 1/4 tsp salt
- 4 TBSP melted butter
- 1 tsp chopped herbs (I used garlic chives)
- 1 cup grated tasty cheese
Instructions:
- Preheat oven to 180C and line muffin tin with paper cups.
- In a bowl mix eggs, water and melted butter.
- Add remaining ingredients and stir until combined.
- Scoop 1/4 cup amounts into prepared muffin tray and cook for 20-30 minutes.
- Cool muffins on cooling rack.
- Serve with your favourite soup.
- You can add 1/2 cup cooked chopped bacon if you are not vegetarian!
