Gluten Free Cheese Muffins


Ingredients:

  • 1 1/4 cups gluten free flour
  • 1 tsp xanthan gum
  • 2 large eggs beaten
  • 2/3 cup water
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 4 TBSP melted butter
  • 1 tsp chopped herbs (I used garlic chives)
  • 1 cup grated tasty cheese

Instructions:

  1. Preheat oven to 180C and line muffin tin with paper cups.
  2. In a bowl mix eggs, water and melted butter.
  3. Add remaining ingredients and stir until combined.
  4. Scoop 1/4 cup amounts into prepared muffin tray and cook for 20-30 minutes.
  5. Cool muffins on cooling rack.
  6. Serve with your favourite soup.
  7. You can add 1/2 cup cooked chopped bacon if you are not vegetarian!
