Gluten Free Orange Cake

Ingredients:
Main:- 3 eggs
- 1 cup sugar
- 1 cup gluten free flour
- 1/2 cup rice flour*
- 3 teaspoons baking powder
- 1/4 teaspoon xanthan gum
- 100 gms butter melted
- 100 gms cream cheese (at room temperature)
- 1 large orange washed and cut into pieces, with skin
- 1 orange
- 1 TBsp sugar
Instructions:
Main:- Preheat oven to 180C.
- Grease and line bottom of 8 inch springform pan.
- Beat eggs and sugar until fluffy.
- In a separate bowl mix dry ingredients and add a bit at a time while mixing eggs and sugar.
- Mix in butter then cream cheese (cut it into small pieces.)
- Place washed and cut up orange into a food processor and blend until fine pulp.
- Fold it into cake mix and pour into prepared pan.
- Smooth top and place in the middle rack of the oven for 1 hour or until toothpick comes out clean.
- To prepare the glaze wash the orange and zest it.
- Squeeze out the juice and place in a small pan with the sugar.
- Cook on low heat until sugar dissolved.
- Remove from heat and mix in zest.
- Brush over warm cake until all surface is covered and glaze finished.
- Wait for an hour and remove from pan.
- Serve plain or with cream or ice cream.
- note: the rice flour can be replaced - I have used buckwheat flour and chickpea flour and it still taste amazing!.
