GlutenFree Creamy Pasta

Ingredients:
- 1 packet gluten free spaghetti or fettuccine
- 1/4 cup olive oil
- 4 egg yolks
- 1/4 cup cream
- 1/4 cup butter melted
- 1/4 cup pine nuts
- 1/2 cup Grated Parmesan
- 8 garlic cloves sliced
- 4 hand fulls of rocket
- salt and pepper
Instructions:
- In a large pot boil 4 litres of salted water and cook pasta per packet directions.
- Meanwhile in a small dry sauce pan toast pine by heating over a flame constantly tossing until you get desired colour ( dark brown, not black.
- Remove pine nuts and set aside.
- In the same pan place the olive oil and garlic and cook until the garlic is golden colour.
- In a separate bowl combine egg yolks, 1/4 cup Parmesan, cream and cooled butter.
- Once pasta cooked immediately drain and place back in pan.
- Pour over olive oil and garlic mixture, season with salt and pepper and toss well.
- Stir through egg mixture, then rockets.
- Serve into bowls and top with some of the remaining Parmesan and pine nuts.
- Serve immediately.
