Creamy Pasta GFO

Ingredients:
- 1 packet spaghetti or fettuccine (GF if required)
- 1/4 cup olive oil
- 4 egg yolks
- 1/4 cup cream
- 1/4 cup butter melted
- 1/4 cup pine nuts
- 1/2 cup Grated Parmesan
- 8 garlic cloves sliced
- 4 hand fulls of rocket
- salt and pepper
Instructions:
- In a large pot boil 4 litres of salted water and cook pasta per packet directions.
- Meanwhile in a small dry pan toast pine by heating over heat and constantly tossing until you get desired colour (dark golden brown, not black).
- Remove pine nuts and set aside.
- In a separate bowl make a sauce by combine egg yolks, half the Parmesan cheese (1/4 cup), cream and cooled butter and set aside.
- In a large pan place the olive oil and garlic and cook until the garlic is golden colour.
- Once pasta is cooked immediately drain and place back in the large pan, with the garlic.
- Pour over olive oil and season with salt and pepper and toss well.
- Stir through egg sauce mixture, then rockets and toss again.
- Serve immediately into bowls.
- Garnish with remaining parmesan and pine nuts.
