Grain and Nut Free Sandwich Bread


Ingredients:

  • 6 eggs separated
  • 4 Tbsp unsalted butter melted
  • 1/2 cup plain Greek yogurt
  • 2 Tbsp Apple Cider Vinegar
  • 1/2 cup coconut flour sifted
  • 1/4 cup Psyllium husks (powder)
  • 1/4 teaspoon salt
  • Sesames seeds (optional)

Instructions:

  1. Preheat oven to 180C.
  2. Grease and line a bread tin and set aside.
  3. In one bowl add all dry ingredients.
  4. In a blender or use a hand mixer beat egg white until soft peaks form.
  5. In a separate bowl add the yolks, Greek yogurt and cooled butter and stir well.
  6. Add this to the dry ingredients and stir until combined.
  7. Fold through 1/3 of the whites until combined.
  8. Add the next third and do the same and lastly add the last 1/3 and fold until incorporated.
  9. Pour into prepared pan and smooth the top with the back of a spoon.
  10. Sprinkle over sesame seeds if desired.
  11. Place in middle rack of the oven and cook for 30-40 minutes or until golden brown.
  12. Cool in pan for 10 minutes before removing.
  13. Slice and serve.
