Grain and Nut Free Sandwich Bread

Ingredients:
- 6 eggs separated
- 4 Tbsp unsalted butter melted
- 1/2 cup plain Greek yogurt
- 2 Tbsp Apple Cider Vinegar
- 1/2 cup coconut flour sifted
- 1/4 cup Psyllium husks (powder)
- 1/4 teaspoon salt
- Sesames seeds (optional)
Instructions:
- Preheat oven to 180C.
- Grease and line a bread tin and set aside.
- In one bowl add all dry ingredients.
- In a blender or use a hand mixer beat egg white until soft peaks form.
- In a separate bowl add the yolks, Greek yogurt and cooled butter and stir well.
- Add this to the dry ingredients and stir until combined.
- Fold through 1/3 of the whites until combined.
- Add the next third and do the same and lastly add the last 1/3 and fold until incorporated.
- Pour into prepared pan and smooth the top with the back of a spoon.
- Sprinkle over sesame seeds if desired.
- Place in middle rack of the oven and cook for 30-40 minutes or until golden brown.
- Cool in pan for 10 minutes before removing.
- Slice and serve.
