Grandmas Bread and Butter Pud


Ingredients:

  • 6 fruit scones cut in half*
  • 2 cups milk
  • 2 eggs
  • 3 Tbsp sugar
  • 1 teaspoon vanilla essence
  • Handful of sultanas (optional)
  • Butter and Jam

Instructions:

  1. Grease a pan with butter or margarine and set aside.
  2. Heat oven to 175C.
  3. Butter both cut sides of scones and one side with jam.
  4. Put the scones together like a sandwich and cut into quarters and place randomly in prepared pan until all the scones are used up.
  5. Sprinkle over sultanas if using.
  6. In a bowl beat eggs with milk, sugar and essence.
  7. Pour milk mixture over bread and place in oven for 20-30 minutes.
  8. There should be no wet bits when done.
  9. Cover with foil if it starts to get too brown, while cooking.
  10. Serve alone or with cream and/or ice cream.
  11. If using bread slices (not fruit scones) butter and jam each slice and place one piece on top of the other, like you are making a sandwich.
  12. Cut each sandwich into 8ths, and place in pan randomly.
  13. If using plain bread and not raisin bread, I would definitely throw in a handful of sultanas!
