Grandmas Rice Custard

Ingredients:
- 2 cups cooked rice
- 2 1/2 cups milk
- 2 eggs beaten*
- 3 TBsp sugar
- 2 TBsp corn flour
- 1 teaspoon vanilla essence
- Sprinkle of nutmeg
Instructions:
- In a microwave proof bowl mix together corn flour with a little bit of the milk to form a paste.
- Add the rest of the ingredients and whisk well.
- Place in microwave on high for 6 minutes, remove from microwave and whisk again.
- Place back in microwave for 5 minutes, remove again and whisk.
- Keep reducing the time by 1 minute each time and whisk each time until it stars to thicken and set.
- This will depend on your microwave.
- When a slight skin starts to appear on top and it becomes thick, this is when it is ready.
- On the last time whisk again then sprinkle with nutmeg.
- Serve hot with cream, milk or ice cream.
- Can be served cold.
