Grandmas Rice Custard


Ingredients:

  • 2 cups cooked rice
  • 2 1/2 cups milk
  • 2 eggs beaten*
  • 3 TBsp sugar
  • 2 TBsp corn flour
  • 1 teaspoon vanilla essence
  • Sprinkle of nutmeg

Instructions:

  1. In a microwave proof bowl mix together corn flour with a little bit of the milk to form a paste.
  2. Add the rest of the ingredients and whisk well.
  3. Place in microwave on high for 6 minutes, remove from microwave and whisk again.
  4. Place back in microwave for 5 minutes, remove again and whisk.
  5. Keep reducing the time by 1 minute each time and whisk each time until it stars to thicken and set.
  6. This will depend on your microwave.
  7. When a slight skin starts to appear on top and it becomes thick, this is when it is ready.
  8. On the last time whisk again then sprinkle with nutmeg.
  9. Serve hot with cream, milk or ice cream.
  10. Can be served cold.
