Grandmas Veggie Soup


Ingredients:

  • 2 lamb shanks or other lamb bones
  • 1 swede chopped
  • 1 turnip chopped
  • 1 parsnip chopped
  • 2 celery sticks chopped
  • 2 large carrots chopped
  • 250 gms McKenzies soup mix (for GF you will have to make your own mix*)
  • 1 bay leaf
  • Salt and Pepper to taste

Instructions:

  1. Place all ingredients in a large pot and cover with water until it is up to your thumb joint over all ingredients.
  2. Bring to the boil, then reduce to a simmer. Alternatively you can place in a slow cooker for 10 - 12 hours on low.
  3. Remove scum from the top and cook until the meat is falling of the bone (about 4-6 hours.)
  4. Remove shanks and shred meat with knife and fork.
  5. Place all back into the pot, including the bones.
  6. Cook until soup thickens, usually another 1-2 hours.
  7. Remove bones and season with salt and pepper.
  8. Serve with crusty bread.
  9. You can freeze the soup.
  10. *GF soup mix, combine a bag of green split peas, yellow split peas, red lentils and brown lentils. Pour each bag into a large container and give it a good mix. Use 4 handfuls of this mix in your soup. I also rinse this mix, in case it has been on the same production line as any gluten products.
