Gratin

Ingredients:
- 500gms minced lamb
- 1 TBsp olive oil
- 1 1/2 teaspoon paprika
- 1 red capsicum chopped
- 1 carrot grated
- 1 zucchini grated
- 2 cloves garlic minced
- 1/4 cup shredded basil
- 400ml Passata
- 1 cup grated cheese
- 1/3 cup water
- 1 cup rice that has been rinsed and soaked for 20 minutes
Instructions:
- Preheat oven to 180C.
- Heat oil in large pan and cook garlic for 4 minutes.
- Add meat to pan and cook until no longer pink.
- Add capsicum and cook for 3-4 minutes.
- Add rice and cook for a few minutes.
- Add carrot, zucchini, passata, paprika, water and basil.
- Give it a good stir and place in a baking dish.
- Sprinkle cheese so it covers the entire top.
- Place in oven for 30 minutes.
- Serve with crusty bread and/or salad, if desired.
