Greek Salad


Ingredients:

Main:
  • 3-4 tomatoes chopped
  • 2 Lebanese cucumbers peeled, de-seeded and chopped
  • 150 gms pitted kalamata olives
  • 160 gms firm Greek feta chopped
  • 1 red, or yellow capsicum chopped (can be omitted)
  • 3 spring onions chopped
Dressing:
  • 3 TBsp olive oil
  • 1 TBsp white wine vinegar
  • 1 teasp oregano
  • 1/4 teasp salt and pepper

Instructions:

Main:
  1. Place all ingredients in a bowl, except dressing ingredients and stir well.
  2. Place dressing ingredients in a small jar and shake well.
  3. Pour contents of dressing over salad and mix to combine.
  4. Best served immediately.
Dressing:

  5. Ps if you prefer you can replace spring onions with a red onion ( However, this will no longer be FODMAP friendly.)
