Greek Salad

Ingredients:
Main:- 3-4 tomatoes chopped
- 2 Lebanese cucumbers peeled, de-seeded and chopped
- 150 gms pitted kalamata olives
- 160 gms firm Greek feta chopped
- 1 red, or yellow capsicum chopped (can be omitted)
- 3 spring onions chopped
- 3 TBsp olive oil
- 1 TBsp white wine vinegar
- 1 teasp oregano
- 1/4 teasp salt and pepper
Instructions:
Main:- Place all ingredients in a bowl, except dressing ingredients and stir well.
- Place dressing ingredients in a small jar and shake well.
- Pour contents of dressing over salad and mix to combine.
- Best served immediately.

- Ps if you prefer you can replace spring onions with a red onion ( However, this will no longer be FODMAP friendly.)
