Green Bean Salad


Ingredients:

  • 200-300gms green beans
  • 1 punnet cherry tomatoes
  • 2 teaspoon olive oil
  • 1/4 lemon juiced
  • 1 garlic clove crushed
  • 3-4 sprigs of basil shredded
  • (use dried if you dont have fresh available)
  • salt and pepper to taste
  • 2 TBsp pine nuts or pepitas (optional)

Instructions:

  1. Cook washed and trimmed beans in water in the microwave for 5 minutes.
  2. Rinse immediately and place in freezer.
  3. While beans are cooling off, cut cherry tomatoes in half or quarters.
  4. Place all ingredients for dressing in a glass jar and shake well.
  5. Remove beans from freezer and mix in basil and tomatoes.
  6. Pour over dressing and lastly sprinkle over pine nuts (if using.)
  7. Serve immediately as a side.
