Ingredients:
- 1 cup or can of chickpeas
- 1 cup lentils (dark colour)
- 3 TBsp olive oil
- 600gms lamb dices (exc for Vegan)
- 4 garlic cloves crushed
- 4 cups water
- 4 vegetable stock cubes
- 400gm can dices tomatoes
- 2 teaspoons cumin
- 1 teaspoons cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon turmeric
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 TBsp corn flour (mixed with 2 TBsp water)
- 1 lemon juiced
- 1 cup fresh coriander chopped
- 1-2 bunches spinach washed and chopped
Instructions:
- Preheat oven to 160 C.
- On stove top heat oil in large heavy based casserole type sauce pan.
- Once hot cook garlic and meat in batches until brown all over.
- Place all meat back in pan and cook with spices for a few minutes, until fragrant.
- Stir in water, stock cubes, can tomatoes, chick peas and lentils.
- Stir well to combine and bring to the boil.
- Place lid on pot and pop in oven for 2 hours.
- Remove pot from oven and stir in the corn flour and water mixture and the spinach, and season if necessary.
- Place back in oven for 30 minutes.
- Once done remove from oven and stir in lemon juice and sprinkle over coriander.
- Serve with crusty bread, mash spud or rice.
- Good hardy winter dish!.
