Healthy Oat and Honey Bread

Ingredients:
- 2 1/3 cups oats (ground to flour)
- 1 cup oats
- 1 cup Greek yogurt
- 1/4 cup honey
- 1 egg
- 3/4 cup milk (your choice)
- 1/4 cup olive oil or melted coconut oil
- 2 tsp baking soda
- 1 tsp salt
- Extra oats or seeds (for the top)
Instructions:
- Preheat oven to 160C and prepare a loaf tin with baking paper.
- Mix dry ingredients and in a separate bowl mix wet ingredients.
- Fold the wet ingredients through the dry ingredients and pour into pan.
- Top with extra oats or other seeds you have on hand.
- Cook in oven for 45-60 minutes or until toothpick comes out clean.
- Remove from tin and cool on wire wrack until cool enough to cut.
- I have mine with peanut butter - yum! Will keep in airtight container for 10 days.
