Healthy Oat and Honey Bread


Ingredients:

  • 2 1/3 cups oats (ground to flour)
  • 1 cup oats
  • 1 cup Greek yogurt
  • 1/4 cup honey
  • 1 egg
  • 3/4 cup milk (your choice)
  • 1/4 cup olive oil or melted coconut oil
  • 2 tsp baking soda
  • 1 tsp salt
  • Extra oats or seeds (for the top)

Instructions:

  1. Preheat oven to 160C and prepare a loaf tin with baking paper.
  2. Mix dry ingredients and in a separate bowl mix wet ingredients.
  3. Fold the wet ingredients through the dry ingredients and pour into pan.
  4. Top with extra oats or other seeds you have on hand.
  5. Cook in oven for 45-60 minutes or until toothpick comes out clean.
  6. Remove from tin and cool on wire wrack until cool enough to cut.
  7. I have mine with peanut butter - yum! Will keep in airtight container for 10 days.
