Healthy Sausage Rolls

Ingredients:
- 3-4 sheets puff pastry defrosted
- 1 TBsp olive oil
- 1 medium fennel diced (core removed)
- 2 cloves crushed garlic
- 500gms pork mince
- 1 lemon rind
- 4 sprigs parsley chopped
- 3 teasp fennel seeds
- 2 teasp sesame seeds
- Dead Horse to serve
Instructions:
- Heat oven to 220C and line two baking trays with baking paper.
- Heat oil in pan and cook fennel and garlic for 8 minutes or until softened.
- Set aside to cool.
- In a large bowl mix cooled fennel, one egg, mince, lemon rind, one teaspoon fennel seeds and parsley.
- Cut each puff pastry sheet in half and place one long amount of pork mixture along the long edge and roll to enclose.
- Place on baking tray with edge on the underside.
- Continue using up pork mixture in this manner until it is all used up.
- Beat the remaining egg and paint all pastry with it.
- Sprinkle the tops with remaining sesame and fennel seeds.
- Bake in oven for approximately 25mins or until golden.
- Once done cut into bite size pieces and serve with sauce and/or chutney.
