Home made Carmen Bars

Ingredients:
- 2 ripe bananas chopped
- 2 heap TBsp peanut butter
- 1 egg beaten
- 2 TBsp coconut or brown sugar
- 2 teaspoon vanilla extract
- 1 teaspoon all spice
- 2 cups untoasted muesli (GF if necessary)
- 1 1/2 cups nuts/seeds/dried fruit of your choice
Instructions:
- Preheat oven to 180C and line a slice tray with baking paper.
- In a bowl mash bananas, then mix in egg, vanilla, peanut butter and sugar.
- Pour in muesli, nuts, seeds, dried fruit and mixed spice and stir until completely combined.
- Pour into tray and push flat with wet hands.
- Place in oven for 20 mins or until lightly golden on the top.
- Remove from oven and tray.
- Place on cooling rack still on grease proof paper.
- Wait 8 minutes then cut into bars.
- Wait until completely cold before serving.
- Store in airtight container.
