Jasmine's Red Lentil Dhal

Ingredients:
Main:- 1 cup red lentils
- 1.5 lt stock
- 1 tsp turmeric
- 1 tsp salt
- 2 handfuls spinach
- 4 cups water
- 50 gms unsalted butter
- 1 tsp cumin seeds
- 4 cloves of garlic
- 3 whole dried chillies or 1 tsp chilli flakes
- 1/2 tsp garam masala
- 1/2 tsp paprika
- 1/2 tsp salt
Instructions:
Main:- Roughly chop spinach.
- Add the first 5 ingredients to a pot. Bring to a boil, then turn down to a simmer.
- Simmer for 45 minutes or until lentils loose their shape.
- While lentils are cooking. Melt butter in a fry pan and add salt and cumin seeds.
- Once cummin seeds begin to sputter, add garlic and other spices.
- Cook for a further minute and remove from heat.
- Once the lentils are done and the curry blend is ready, pour the curry blend over the lentils and serve with rice and Greek Yogurt.
