Jasmine's Red Lentil Dhal


Ingredients:

Main:
  • 1 cup red lentils
  • 1.5 lt stock
  • 1 tsp turmeric
  • 1 tsp salt
  • 2 handfuls spinach
  • 4 cups water
Curry Blend:
  • 50 gms unsalted butter
  • 1 tsp cumin seeds
  • 4 cloves of garlic
  • 3 whole dried chillies or 1 tsp chilli flakes
  • 1/2 tsp garam masala
  • 1/2 tsp paprika
  • 1/2 tsp salt

Instructions:

Main:
  1. Roughly chop spinach.
  2. Add the first 5 ingredients to a pot. Bring to a boil, then turn down to a simmer.
  3. Simmer for 45 minutes or until lentils loose their shape.
Curry Blend:
  1. While lentils are cooking. Melt butter in a fry pan and add salt and cumin seeds.
  2. Once cummin seeds begin to sputter, add garlic and other spices.
  3. Cook for a further minute and remove from heat.
  4. Once the lentils are done and the curry blend is ready, pour the curry blend over the lentils and serve with rice and Greek Yogurt.
