Lamb Cutlets


Ingredients:

  • Lamb cutlets 2-4 per person
  • Punnet mini tomatoes
  • Few handfuls snap or snow peas
  • Cumin
  • 1 Tbsp balsamic vinegar
  • Salt and Pepper to taste
  • Hummus (for serving)
  • Pita bread (for serving and use GF if necessary)

Instructions:

  1. Heat small amount of olive oil in fry pan.
  2. Cook cutlets for 2 minutes each side.
  3. Sprinkle with cumin while cooking.
  4. Mean while blanch snow peas and chop tomatoes in half.
  5. Once peas cooked pop them in fridge to cool. This prevents over cooking.
  6. Once the peas are cool, toss with cut tomatoes and balsamic vinegar.
  7. Place desired amount of cutlets, a couple of TBsp of tomatoes and pea mix, pita bread and store bought hummus on each plate.
  8. Ready in 10 minutes- for nights you need something super quick!
