Lamb Cutlets

Ingredients:
- Lamb cutlets 2-4 per person
- Punnet mini tomatoes
- Few handfuls snap or snow peas
- Cumin
- 1 Tbsp balsamic vinegar
- Salt and Pepper to taste
- Hummus (for serving)
- Pita bread (for serving and use GF if necessary)
Instructions:
- Heat small amount of olive oil in fry pan.
- Cook cutlets for 2 minutes each side.
- Sprinkle with cumin while cooking.
- Mean while blanch snow peas and chop tomatoes in half.
- Once peas cooked pop them in fridge to cool. This prevents over cooking.
- Once the peas are cool, toss with cut tomatoes and balsamic vinegar.
- Place desired amount of cutlets, a couple of TBsp of tomatoes and pea mix, pita bread and store bought hummus on each plate.
- Ready in 10 minutes- for nights you need something super quick!
