Larb


Ingredients:

  • 850 gems minced pork
  • 3 TBspoons olive oil
  • 2 garlic cloves crushed
  • 1 inch ginger grated
  • 1/2 teaspoon chilli powder
  • 1-2 limes juiced
  • 1/3 cup fish sauce
  • 1 teaspoon sugar
  • 1/4 cup mint leaves chopped
  • 3 cups rice noodles cooked and chopped
  • 1 lettuce leaves removed
  • Extra limes to serve

Instructions:

  1. Prepare lettuce leaves and set aside. Google how to easily remove lettuce leaves easily.
  2. Combine lime juice, fish sauce and sugar, stir to combine and set aside.
  3. Heat oil in pan and cook meat until brown.
  4. Add garlic, ginger and chilli and cook a few minutes.
  5. Pour in juice mixture and stir through with noodles.
  6. Serve inside a lettuce cup with lime on the side.
  7. Alternately serve in rolled lettuce leaves, with thinly sliced cumber, lettuce and some chilli sauce.
