Ingredients:
- 850 gems minced pork
- 3 TBspoons olive oil
- 2 garlic cloves crushed
- 1 inch ginger grated
- 1/2 teaspoon chilli powder
- 1-2 limes juiced
- 1/3 cup fish sauce
- 1 teaspoon sugar
- 1/4 cup mint leaves chopped
- 3 cups rice noodles cooked and chopped
- 1 lettuce leaves removed
- Extra limes to serve
Instructions:
- Prepare lettuce leaves and set aside. Google how to easily remove lettuce leaves easily.
- Combine lime juice, fish sauce and sugar, stir to combine and set aside.
- Heat oil in pan and cook meat until brown.
- Add garlic, ginger and chilli and cook a few minutes.
- Pour in juice mixture and stir through with noodles.
- Serve inside a lettuce cup with lime on the side.
- Alternately serve in rolled lettuce leaves, with thinly sliced cumber, lettuce and some chilli sauce.
