Lemon Shortbread


Ingredients:

  • 1 cup Gluten Free flour
  • 1/3 cup coconut flour
  • 1/2 cup coconut sugar
  • 1/2 teaspoon baking powder
  • 1 egg
  • 150 gms butter melted
  • Zest of one lemon
  • 2 teaspoon vanilla essence

Instructions:

  1. Preheat oven to 160C.
  2. Prepare two trays and line with baking sheet and set aside.
  3. In a bowl place gluten free flour, coconut flour, coconut sugar, baking powder and lemon zest.
  4. Stir well with a whisk, then pour in melted butter and stir with a wooden spoon.
  5. In a separate bowl whisk egg and vanilla essence.
  6. Pour into mixture and stir with wooden spoon until completely mixed.
  7. Scoop out heap tablespoon amounts and roll into balls and place evenly spreading them apart covering the trays.
  8. Push down balls of dough slightly with the back of a fork.
  9. Place in oven for 10 - 15 minutes or until golden brown.
  10. Cool completely and store in airtight container.
  11. Great with a cuppa!.
