Lemon Shortbread

Ingredients:
- 1 cup Gluten Free flour
- 1/3 cup coconut flour
- 1/2 cup coconut sugar
- 1/2 teaspoon baking powder
- 1 egg
- 150 gms butter melted
- Zest of one lemon
- 2 teaspoon vanilla essence
Instructions:
- Preheat oven to 160C.
- Prepare two trays and line with baking sheet and set aside.
- In a bowl place gluten free flour, coconut flour, coconut sugar, baking powder and lemon zest.
- Stir well with a whisk, then pour in melted butter and stir with a wooden spoon.
- In a separate bowl whisk egg and vanilla essence.
- Pour into mixture and stir with wooden spoon until completely mixed.
- Scoop out heap tablespoon amounts and roll into balls and place evenly spreading them apart covering the trays.
- Push down balls of dough slightly with the back of a fork.
- Place in oven for 10 - 15 minutes or until golden brown.
- Cool completely and store in airtight container.
- Great with a cuppa!.
