Lemon Slice


Ingredients:

Base:
  • 1 Packet Marie biscuits crushed
  • 1 cup coconut
  • 1 lemon grind grated
  • 125 gms butter
  • 1/2 can condensed milk
Icing::
  • 1 1-2 cups icing sugar sifted
  • 1 TBsp butter melted
  • 2 TBsp lemon juice
  • Extra coconut

Instructions:

Base:
  1. Grease a baking dish about 19x28 cm with butter and put a sheet of grease proof paper on top, then set aside.
  2. Put crushed biscuits, coconut and lemon grind in a large bowl and stir to cook combine.
  3. Melt butter on stove top in a small saucepan and once all melted add condensed milk.
  4. Stir well and add to biscuits.
  5. Mix all together with a spoon and pour in prepared dish.
  6. Flatten with your hand or the back of the spoon to make it as smooth as possible.
  7. Place in fridge while you prepare icing.
Icing::
  1. Place icing sugar in a bowl and pour in lemon juice and melted butter.
  2. Stir well to remove all the lumps.
  3. You may need to add a little hot water (1 TBsp) if it seems too dry.
  4. Pour on top of base and smooth out evenly.
  5. Sprinkle with extra coconut if desired.
  6. Cover and refrigerate for 4 hours or until icing set.
  7. Cut into bite size pieces.
  8. Stored in an airtight container.
