Ingredients:
- 1 cup gluten free flour
- 1 1/2 cups seeds
- ( I put in 1/2 cup of three different types - chia/pumpkin/sun flour seeds, use what you like)
- 2 TBsp coconut flour (optional)
- 1/2 cup maple syrup
- 1/2 cup melted butter
- 2 eggs beaten
- 1/2 cup choc chips (if desired)
Instructions:
- Grease lamington tray and place grease proof paper inside it and set aside.
- Preheat oven to 180C.
- In a bowl mix all dry ingredients with whisk then add all the wet ingredients.
- Stir till combined and carefully place in prepared pan.
- Flatten it down with wet hands.
- Cook for 30 mins or until slightly golden.
- Cool in tray and once completely cool cut in bars.
- Store in airtight container and take as a snack for lunches.
