Lunch slice


Ingredients:

  • 1 cup gluten free flour
  • 1 1/2 cups seeds
  • ( I put in 1/2 cup of three different types - chia/pumpkin/sun flour seeds, use what you like)
  • 2 TBsp coconut flour (optional)
  • 1/2 cup maple syrup
  • 1/2 cup melted butter
  • 2 eggs beaten
  • 1/2 cup choc chips (if desired)

Instructions:

  1. Grease lamington tray and place grease proof paper inside it and set aside.
  2. Preheat oven to 180C.
  3. In a bowl mix all dry ingredients with whisk then add all the wet ingredients.
  4. Stir till combined and carefully place in prepared pan.
  5. Flatten it down with wet hands.
  6. Cook for 30 mins or until slightly golden.
  7. Cool in tray and once completely cool cut in bars.
  8. Store in airtight container and take as a snack for lunches.
