Macaroons


Ingredients:

  • 4 egg whites
  • 4 3/4 cups desiccated coconut
  • 1/2 cup caster sugar
  • 1 teaspoon vanilla essence

Instructions:

  1. Preheat oven to 160C and line two baking trays with baking paper.
  2. In a mixer beat egg whites, sugar and vanilla essence until foamy and sugar dissolved.
  3. Fold in coconut and make sure all the coconut is moistened.
  4. Scoop out 1 TBSP of mixture onto trays, evenly spread out, until all used up.
  5. Bake in oven for 20 minutes or until golden.
  6. Cool completely on trays and store in airtight container.
