Ingredients:
- 4 egg whites
- 4 3/4 cups desiccated coconut
- 1/2 cup caster sugar
- 1 teaspoon vanilla essence
Instructions:
- Preheat oven to 160C and line two baking trays with baking paper.
- In a mixer beat egg whites, sugar and vanilla essence until foamy and sugar dissolved.
- Fold in coconut and make sure all the coconut is moistened.
- Scoop out 1 TBSP of mixture onto trays, evenly spread out, until all used up.
- Bake in oven for 20 minutes or until golden.
- Cool completely on trays and store in airtight container.
