Mexican Black Beans and Rice


Ingredients:

  • 3 cups cooked rice
  • 1 can black beans rinsed
  • 1 can chopped tomatoes
  • 1 red pepper diced
  • 3-4 garlic cloves crushed
  • 2-3 TBsp olive oil
  • 1/2-1 teasp chilli powder
  • 1/2-1 teasp paprika
  • 1 teasp cumin
  • 2 TBsp oregano
  • 2 stock cubes
  • 1/4 cup boiling water
  • salt and pepper to taste

Instructions:

  1. Heat oven to 180C.
  2. In a large pan that can go in the oven, heat olive oil for 2-3 minutes.
  3. Once hot cook garlic for 3 minutes, then add red pepper and cook for a further 3 minutes.
  4. Add stock cubes to boiling water and add it with the rest of the ingredients and stir very well.
  5. Once all combined place lid on pan and place in oven for 30-40 minutes or until all hot.
  6. Serve as a side or main.
  7. This can be doubled if required.
