Mexican Black Beans and Rice

Ingredients:
- 3 cups cooked rice
- 1 can black beans rinsed
- 1 can chopped tomatoes
- 1 red pepper diced
- 3-4 garlic cloves crushed
- 2-3 TBsp olive oil
- 1/2-1 teasp chilli powder
- 1/2-1 teasp paprika
- 1 teasp cumin
- 2 TBsp oregano
- 2 stock cubes
- 1/4 cup boiling water
- salt and pepper to taste
Instructions:
- Heat oven to 180C.
- In a large pan that can go in the oven, heat olive oil for 2-3 minutes.
- Once hot cook garlic for 3 minutes, then add red pepper and cook for a further 3 minutes.
- Add stock cubes to boiling water and add it with the rest of the ingredients and stir very well.
- Once all combined place lid on pan and place in oven for 30-40 minutes or until all hot.
- Serve as a side or main.
- This can be doubled if required.
