Mexican Chilli Pie


Ingredients:

Filling:
  • 1 kg mince beef
  • 1 can crushed tomatoes
  • 1 TBsp tomatoe paste
  • 1 can black beans rinsed and drained
  • 1-2 beef stock cubes crushed
  • 3 TBsp olive oil
  • 3-4 cloves garlic crushed
  • 1/2 teaspoon chilli powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • salt and pepper to taste
Topping:
  • 1 small French loaf sliced
  • 3 TBsp olive oil
  • 2-3 garlic cloves crushed
  • 1/2 cup grated cheese
  • 2-3 spring onions chopped

Instructions:

Filling:
  1. Heat oil in large fry pan and cook garlic for a few minutes.
  2. Then cook mince until brown.
  3. Add all other ingredients to the pan and stir well.
  4. Heat through and pour into large baking dish.
Topping:
  1. Place bread slice on top of meat, in a single layer until completely covered.
  2. Brush top with combined oil and garlic, then sprinkle with cheese.
  3. Cook in preheated moderate oven for 30 minutes.
  4. Remove from oven and sprinkle top with spring onions to serve.
