Mini Oat Bars

Ingredients:
- 1 cup rolled oats (GF if necessary)
- 1 cup flour sifted (GF if necessary)
- 3/4 cup raw sugar
- 3/4 cups desiccated coconut
- 2 TBsp honey
- 2 TBsp water
- 1/2 teaspoon bicarb soda
Instructions:
- Prepare a baking dish by greasing then lining with baking paper.
- Preheat oven to 180C.
- In a large bowl place flour, oats, sugar and coconut, then stir well.
- In a small sauce pan melt butter and honey.
- In a separate bowl combine water and soda, then add to butter mixture (it will bubble up).
- Remove from heat and mix well, then stir into dry ingredients.
- Mix well then pour into prepared tray and push down with your hands.
- Place in oven for 20-25 minutes or until the center is golden.
- Remove from oven and let it sit on a wire rack for 7 minutes.
- Carefully remove from tray and place back on wire rack to cool.
- Before it is completely cool, cut in to bite size pieces, while on baking paper.
- Leave there until completely cool.
- Store in air tight container.
