Mint Slice


Ingredients:

Base:
  • 125gms pitted dates chopped
  • 1/4 cup water
  • 250gm Scotch finger biscuits
  • 1/4 cup copha melted
Filling:
  • 350gms icing sugar sifted
  • 1 teasp peppermint essence
  • 4 drops green food colour (optional)
  • 3-4 Tbsp boiling water
Top:
  • 1/3 cup copha melted
  • 2 TBsp maple syrup or honey
  • 1/4 cup pure cocoa sifted

Instructions:

Base:
  1. Grease a dish approximately 18x26cm then place baking paper in it and set aside.
  2. Place dates and water in a small sauce pan and bring to boil then turn down low.
  3. Continuously stir until dates are soft and water absorbed.
  4. Take it of the heat and set aside.
  5. Break biscuits up and place in a blender. If you don't have a blender, smash biscuits in a clean bag.
  6. Whiz until fine crumbs, then do another whiz with cocoa added.
  7. Add date mixture and biscuits together and mix until combined.
  8. Tip into prepared dish and push down with your hands until flat.
  9. Place in freezer while you make the filling.
Filling:
  1. Sift icing sugar in a bowl.
  2. In a separate bowl place 3 TBsp boiling water, food colour and essence.
  3. Add to icing sugar and stir vigorously add another TBsp of boiling water if too thick.
  4. Pour over base and smooth it out.
  5. Place dish back in freezer while making the topping.
Top:
  1. In a small saucepan melt copha.
  2. Once completely melted remove from heat and add maple syrup then sifted cocoa.
  3. Stir well to remove any lumps.
  4. Pour over filling and this time place in fridge for 20 minutes.
  5. Remove from dish and cut into small squares.
  6. Store in fridge.
