Muesli Cookies

Ingredients:
- 1 1/2 cups muesli (replace with Gluten free if necessary)
- 1 cup desiccated coconut
- 1/2 SR Flour (replace with Gluten free if desired)
- 1 teaspoon cinnamon
- 125 gms butter
- 1/4 cup brown sugar
- 1/4 cup honey
Instructions:
- Preheat oven to 160C.
- Grease two baking trays and set aside.
- Place all dry ingredient except brown sugar, in a bowl stir and set aside.
- Melt butter in a small sauce pan then add honey and brown sugar.
- Stir well and once sugar dissolved, add to dry ingredients. Stir to mix all ingredients.
- Place heap tablespoon amounts on prepared baking trays allow space for spreading.
- Place in oven for 8-10 mins or until golden brown.
- Remove from oven and leave on the tray for 10 minutes.
- Remove cookies from tray with spatula to a wire rack to cool completely.
- Once completely cool store in air tight container.
