Ingredients:
- 1 cup brown or green lentils
- 6 cups water
- 1/4 cup olive oil
- 2 chicken stock cubes
- 2-3 garlic cloves crushed
- 2 cups rice
- salt and pepper
- 1/4 cup chopped parsley
- Chilli flakes
Instructions:
- In a pot rinse and drain the lentils three times, then add two cups of water.
- Bring to the boil then reduce to a simmer and cook for 12 minutes.
- Remove from heat and set aside.
- Heat 3 TBsp of olive oil in a large pan and cook garlic for 4 minutes.
- Add the rice and cook stirring until all the rice is covered in oil.
- Add 4 cups of water, the lentils and stock cubes.
- Bring to the boil and then reduce to a simmer, place the lid on the pan and cook for 20 minutes.
- Once done stir through parsley, remaining olive oil, salt and pepper.
- Sever warm with dried onions and pepper flakes sprinkled on top.
- Store in fridge.
