Nasi Goreng


Ingredients:

  • 2-3 cups long grain rice cooked
  • 2 TBsp oil
  • 400gms pork mince*
  • 2 cloves garlic crushed
  • 1-2 chillis chopped
  • 2 carrots grated
  • 1/2 red pepper chopped
  • 2 Bok Choy washed and chopped
  • 1/4-1/2 cabbage shredded
  • 3 spring onions chopped
  • 4 TBsp soy sauce (GF)
  • 4 TBsp tomatoe sauce
  • 2 TBsp fish sauce
  • salt and pepper to taste
  • 4-6 eggs fried (to serve)

Instructions:

  1. Heat oil in wok or large fry pan and cook garlic and chilli for about 5 minutes or until aromatic.
  2. Cook pork until no longer pink then add rice, carrot, red capsicum and combined sauces.
  3. Stir well and when it is heated through, add Bok Choy and cabbage.
  4. Once Bok choy and cabbage has wilted stir well and sprinkle spring onions on top. Fry eggs in a seperate fry pan, if using.
  5. Serve in bowls with fried egg on top and an extra sprinkle of spring onions and extra chopped chilli if desired.
  6. Substitute pork for chicken mince or chopped chicken meat.
  7. You can also omit the meat to make it vegetarian.
  8. Refrigerate if not all consumed for up to 3-5 days.
