Oatmeal Banana Bread


Ingredients:

  • 2 eggs beaten
  • 1/2 cup Greek yogurt
  • 1/2 cup honey
  • 1/2 cup melted butter
  • 2 cups mash bananas
  • 1 1/2 cup oat flour* (use GF if required)
  • 1 cup oats (use GF if desired)
  • 8 seeded dates chopped and blended
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder, baking soda and cinnamon

Instructions:

  1. Heat oven to 170C.
  2. Grease and line a baking dish, set aside.
  3. In seperate bowls mix wet ingredients and dry ingredients.
  4. Add wet ingredients to dry and stir well.
  5. Pour mixture in prepared baking dish, and cook for 30-40 minutes or until golden brown.
  6. * make oat flour by placing oats in a blender and blend on high for 1-2 minutes.
