Okonomiyaki

Ingredients:
Main:- 1 cup flour (GF if necessary)
- 2 eggs
- 160 gms chicken stock
- 2 spring onions chopped
- 1/8 cabbage shredded
- 1 zucchini grated
- 1 small carrot grated
- salt and pepper to taste
- Oil for frying
- Bacon
- Pickled ginger
- Shrimp
- Spring onions chopped
- Kewpie mayonnaise
- Okonomi sauce (or teriyaki sauce) (GF if necessary)
- Fried shallots
Instructions:
Main:- Whisk eggs in a large bowl, add flour, stock and salt and pepper and whisk to combine.
- Stir in all other ingredients.
- Heat oil in large pan and place about 1/2 cup of mixture making it as round as possible.
- You can place an amount of bacon and/or shrimp on pancake before flipping.
- Once edges start to cook flip over and cook other side.
- Flip over a couple of time to ensure middle cooked and both sides are golden.
- Remove from pan and garnish with sauces and spring onions and/or bacon if desired.
- Serve hot.
- Add these as sides or you can mix in with the eggs.
- Squeeze sauces all over top and sprinkle Shallots and Spring Onions on top.
