One Pot Pasta

Ingredients:
- 4 garlic cloves crushed
- 4 TBsp olive oil
- 500 gms mince pork (or one can of lentils rinsed and drained and one or two carrots grated, if you want vegetarian)
- 2 TBsp Italian herbs
- 2 cans chopped tomatoes
- 1 bottle passata sauce
- 1/3 cup tomatoe paste
- 2 bay leaves
- 1 TBsp oregano
- 1/4 cup water
- 10 long thin lasagna pieces ( gluten free if required)
- 2-3 cups baby spinach
- 2-3 cups grated cheese
- 1/3 cup grated Parmesan
- 250 gms ricotta
- salt and pepper to taste
- Chopped parsley for garnish
Instructions:
- Heat oil in large dish and cook garlic with bay leaves for 4-5 minutes on medium heat.
- Add meat and cook until no longer pink (if using meat.)
- Add can tomatoes, passata sauce, tomatoe paste, oregano, water and pasta sheets and bring to a boil then reduce to a simmer.
- Cook for 15 minutes with the lid on (stir occasionally.)
- Once Pasta is cooked (about 20 mins) add lentils and carrots if you want it vegetarian and add spinach, stir through well.
- Season with salt and pepper if desired.
- Sprinkle over grated cheeses and plop ricotta in heap spoonfuls evenly around dish.
- Cover with lid and cook for another 5-10 minutes.
- Remove lid and sprinkle with parsley, serve hot.
