Orange Cake


Ingredients:

  • 2 oranges
  • 180 butter melted
  • 3 eggs beaten
  • 1 cup sugar
  • 1 1/2 cups SR flour
  • 1 1/2 cups icing sugar sifted
  • 2 TBsp butter melted

Instructions:

  1. Preheat oven to 180C.
  2. Grease and line a loaf tin with grease proof paper and set aside.
  3. Place one orange that has been cut up into blender and pulse until pulp forms.
  4. Add cooled butter, eggs, sugar and flour.
  5. Process until combined (push down sides if needed.)
  6. Pour into cake tin and cook for about 40mins or until skewer comes out clean.
  7. Turn onto a wire rack.
  8. Once completely cool prepare icing sugar.
  9. Remove zest from remaining orange and then juice it.
  10. Mix icing sugar, 2 TBsp of melted butter zest in a bowl until combined.
  11. Add as much orange juice to make the constancy you require.
  12. Decorate cake with icing then sprinkle zest on top.
  13. Cool in fridge for 15 mins before serving.
