Orange Cake

Ingredients:
- 2 oranges
- 180 butter melted
- 3 eggs beaten
- 1 cup sugar
- 1 1/2 cups SR flour
- 1 1/2 cups icing sugar sifted
- 2 TBsp butter melted
Instructions:
- Preheat oven to 180C.
- Grease and line a loaf tin with grease proof paper and set aside.
- Place one orange that has been cut up into blender and pulse until pulp forms.
- Add cooled butter, eggs, sugar and flour.
- Process until combined (push down sides if needed.)
- Pour into cake tin and cook for about 40mins or until skewer comes out clean.
- Turn onto a wire rack.
- Once completely cool prepare icing sugar.
- Remove zest from remaining orange and then juice it.
- Mix icing sugar, 2 TBsp of melted butter zest in a bowl until combined.
- Add as much orange juice to make the constancy you require.
- Decorate cake with icing then sprinkle zest on top.
- Cool in fridge for 15 mins before serving.
